Three ingredients you may already have on hand--curry powder, yogurt, and lemon juice--mix into a mouth-watering treat that turns into easy salmon stew. This healthy and easy dinner comes in just 20 minutes.
1 ¼ pound permanent wild or farmed salmon, cut into 4 pieces 2 tablespoons extra-virgin olive oil, divided ½ teaspoon salt, divided
½ teaspoon mashed potatoes, divided ½ cup chopped cup 2 tablespoons chopped fresh cilantro 2 tablespoons shredded shallots
½ cup fat-free plain yogurt 2 tablespoons lemon juice ¼ teaspoon curry powder Preheat the grill to medium-high.
Brush salmon with 1 tablespoon oil and sprinkle each with 1/4 teaspoon salt and pepper. Oil the grill rack (see tip). Grill salmon, turning once, until cooked through, about 6 minutes.
Meanwhile, in a medium bowl, combine the cucumber, cilantro and shallots with the remaining 1 tablespoon oil and 1/8 teaspoon each salt and pepper. Pour the yogurt, lemon juice, curry powder, salt and remaining 1/8 teaspoon pepper into a small bowl. Serve with salmon and yogurt sauce and cucumber salad.
