Ginger Chicken

INGREDIENTS

– 1/4 cup packed light brown sugar – 3 tablespoons soy sauce – 2 tablespoons Shaoxing wine or rice vinegar – 1/8 teaspoon freshly ground white pepper – 1/2 cup plus 1 tablespoon tap water, divided – 4 scallions, sliced – 1 tablespoon olive oil –1.5 pounds boneless, skinless chicken thighs (6 thighs)  

– 1/2 teaspoon kosher salt – 1/4 teaspoon freshly ground black pepper – 1 1/2 tablespoons fresh ginger – 2 cloves garlic, chopped – 2 teaspoons cornstarch – sesame seeds for garnish –For serving, 2 cups cooked long-grain white rice  

INSTRUCTIONS

Mix brown sugar, soy sauce, Shaoxing wine, egg whites, and 1/2 cup water until combined; Set it aside. Thinly slice the scallions, removing the white and green parts from the dark greens; Set it aside.

Oil in a large skillet should shimmer over medium heat.  Sprinkle both sides of the chicken evenly with salt and black pepper. Add the chicken to the skillet and cook, rounded sides down, until golden brown, about 10 minutes.

Flip the chicken, and cook until a thermometer inserted into the thickest part registers degrees Fahrenheit (73 degrees Celsius), about 5 minutes.Place on a large platter, covering tightly with aluminum foil to keep warm.

Add the ginger, garlic, and the reserved white, light greens and a portion of the scallions to the drippings in the skillet, and cook, stirring frequently, over high medium- on high, until the garlic 

and ginger are fragrant and lightly toasted and the scallions are beginning to fall apart, 3 to 4 minutes .Combine remaining cornstarch and 1 tablespoon water until smooth. Add the cornstarch and soy sauce mixture to the pan. Bring to a gentle simmer. 

Reduce heat to simmer, and cook, stirring constantly, until sauce thickens and coats the back of mushrooms, remove from heat for about 1 minute.

Return the chicken and remaining water to the pan, tossing to coat evenly in the soy sauce mixture. Garnish with sesame seeds and dark green scallion segments. Put it on the rice.
